Nicola from Osteria il Coccia, Ettalong is back to share more incredible cheffing tips for the home cook, this Masterclass is focussing on Cooking With Fire, which is a passion of Nico’s. Nicola is an Italian born fine dining chef and has cooking credentials that include Biota, Ormeggio, Quay, Otto and, most recently, the chef-hatted Bistro Officina in Bowral, which he ran with his French wife, Alexandra.
This class is going to be held at a beautiful private property in Killcare with a permaculture garden and Nico will be cooking outdoors and with fire, his preferred cooking method. The class will include a starter and Nico cooking a three-course meal for us to enjoy, all using only fire. This is an exciting and unique opportunity to see Nico doing what he loves the most, cooking with fire. As far as I know this is something that has never been done, most certainly not in Killcare. As the farm is owned by local permaculture farmer Adam, it is also a unique opportunity to see his property and what’s growing there. We hope there will be a lot of fresh produce growing at the time of the class so Nico can literally cook straight from the garden to the fire. True ‘Farm to Flame’, as with the title of his book.
